My workspace looks quite Mexican on salsa days… aside from my chopsticks 😂 I can’t cook without them!

Also, my partner is disputing that the 9” x 13” aluminum pans are called “charola” (apparently translated as“tray”) in , but he doesn’t know what they’re actually called… I think I’ll stick with “charola” until otherwise corrected.

I wrote “Charola! 📝📝” My partner responded: “No. It’s a lie. None use a charola in Mexico.”
My stovetop, with a pot of tomatillos (actually “tomates (verdes)” in Spanish) and chile arbol boiling away on the back burner, with my big cast iron pan lined with aluminum foil sizzling away tomatoes (actually “jitomates” in Spanish), chile serrano, and Anaheim peppers on the front burner. Off to the side, there is a bag of coarse sea salt from Mexico, and a molcajete with the salt and garlic, ready to be ground. There is a pair of chopsticks lying on the molcajete, which I use to turn the vegetables as they grill.
