Planet Hulk is really the only truly interesting Hulk story I think I've ever read. I haven't read much Hulk though. As a bonus, World War Hulk follows Planet Hulk, and that's just a pretty awesome exhibition of Hulk smashing through pretty much everyone who matters in Marvel.
